The Story of Urfa Kebab: Origin, History, and Culinary Secrets

Şanliurfa, an ancient and cultural city of Turkey, moved from a locally roasted grill to an internationally renowned one. Urfa kebabi, which is worldly famous for its melt in mouth texture and decidedly savory taste, is a star dish of world cuisines and if any kind of Holy Grail exists at all relating to quality meat or traditional craftsmanship it would surely include Urfa.

Urfa Kebab History: The Ancient Culinary Roots of Şanlıurfa

Serving Style

The Kebab itself forms just a part of this civilization, where people have settled in the Şanliurfa region for more than 12,000 years, along with its ancient history. People trace the history of the Anatolian kebab back to nomadic lifestyles. Where tribes used swords or large blades to barbecue and grill meat on an open fire on skewers.

The outdoors practice was refined to a fine art over centuries by the master butchers and chefs (kebapçı) of Şanliurfa. Urfa Kebab has a unique point in the traditional Sira Nights (Sıra Geceleri). Several socio-cultural gatherings where people meet, sing songs together, narrate legends and feast.

What Makes Urfa Kebab Unique?

Why Urfa Is Unique

Where most Middle Eastern kebabs turn the dial up to eleven, slathering themselves in flavor-bomb spices like they’re on a mission to steal your taste buds. Kebab knows that quality and simplicity go a long way.

Minced Hand-Meat (Zirh): Instead of grinding meat by an electric meat grinder, traditional kitchen-chefs mince the high-quality lamb meat (generally mixed with some beef and fat) by hand using a double-handled curved knife called “Zirh “. This is a technique through which the natural juices retain within, and it gives a very tender texture.

Urfa Kebab: The Urfa kebab does not use this and avoids completely spicy red chili flakes compared to the fierier kins Adana Kebab. Chefs do not strongly season the dish itself. Except for a bracing little nod to salt, onion, garlic, cumin. Occasionally Urfa isot (one of those smoky sun-dried peppers that this part of the world sends).

Charcoal-Grilling: Chefs loosely shape the meat on broad steel skewers and grill it over burning oak embers, imparting an exceptional smoky smell.
