Kabsa Rice: The History of Saudi Arabia’s Iconic dish
Kabsa Rice: National dish of Saudi Arabia and its delicious history

This is one of a handful of Middle Eastern culinary traditions that has come to be very synonymous with hospitality. Ancient trade brought rice and mixed spices together to create Kabsa rice, making it the national dish of Saudi Arabia. Moreover a home center in every family around tradition or history rather than only food.
Kabsa Rice: History and Meaning

Kabsa comes from the Arabic word “kabs” كَبَسْ, which means effectively to press or squeeze. Its unique cooking process creates this direct link, as compressing the rice, meat, vegetables, and spices into a single pot allows every grain of rice to absorb maximum flavor.
Traditional stories are that nomadic tribes of Bedouin pilgrims on the Arabian Peninsula brought Kabsa rice back. The nomadic Bedouin hated the inhospitable deserts and cooked simple one-pot meals with high energy. They had a single pot, placed over an open flame to throw in whatever rice they could secure with the protein (lamb, camel, goat) that managed to sneak their way into their kettle.
For centuries, spice-seller mills dotted the rudimentary trade routes through the Hejaz. To create flavors from all the way as far away at India, Persia and East Africa. That simple Bedouin meal evolved into a floral arrangement of food such as Basmati rice, black limes (loomi), saffron and spices such as cinnamon, cloves and cardamom.
Regional Cooking Styles and Variations

The mainstay Kabsa rice is typically long grain rice and soft meat, with several regional variations within the Kingdom:
Mandi: In this traditional cooking style, cooks place spiced meat in an earthenware oven (tannoor) and then mix it with flavored rice before serving.
Mathbi : It is cooked indirectly on hot, flat stone kept directly on burning charcoal giving it a unique smokey taste.
Madghut: The traditional pressure cooked ultra tender loving version for those who love this dish.
Magnificent Kabsa rice is typically served family style on a huge centre plate and decorated with fried onions, roasted pine nuts or almonds and perhaps some raisins as well. Usually accompanied by Daqqus (a spicy garlic-tomato sauce) served floor-level and shared with a group of friends, eating with one hand — the right.
